Treatment: Equivalent heat treatments
Effective 11 December 2018 to 3 May 2019The following heat treatments are considered equivalent to a core temperature of 70 °C for 8.2 minutes. The heat treatment must be applied as a minimum core temperature and minimum time held at that core temperature using moist heat in a commercial heating process:
71 °C for not less than 6.6 minutes
72 °C for not less than 5.2 minutes
73 °C for not less than 4.2 minutes
74 °C for not less than 3.3 minutes
75 °C for not less than 2.6 minutes
76 °C for not less than 2.1 minutes
77 °C for not less than 1.7 minutes
78 °C for not less than 1.3 minutes
79 °C for not less than 1.1 minutes
80 °C for not less than 1 minute
Any treatment at a time of less than 0.3 minutes (18 seconds) will not be accepted.
Heat treatments under 70 °C will not be accepted as a sole biosecurity risk management measure for composite egg products. All other heat treatments will be referred to our policy division for further assessment.
