Treatment: Equivalent heat treatments
Effective 14 October 2021The following heat treatments are considered equivalent to a core temperature of 70°C for 8.2 minutes. The heat treatment must be applied as a minimum core temperature and minimum time held at that core temperature in a commercial heating process:
- 71°C for not less than 6.6 minutes
- 72°C for not less than 5.2 minutes
- 73°C for not less than 4.2 minutes
- 74°C for not less than 3.3 minutes
- 75°C for not less than 2.6 minutes
- 76°C for not less than 2.1 minutes
- 77°C for not less than 1.7 minutes
- 78°C for not less than 1.3 minutes
- 79°C for not less than 1.1 minutes
- 80°C for not less than one minute
Any treatment at a time of less than 0.3 minutes (18 seconds) will not be accepted.
Heat treatments under 70°C will not be accepted as a sole biosecurity risk management measure for composite egg products. All other heat treatments will be referred to our policy division for further assessment.
