Bulgur wheat (also known as bulghur, bulgar, birghil, burgul, bourghoul etc.) is processed wheat product that has been parboiled and dried before milling. During this process the bran is partially removed. Bulgur has a glossy golden or light brown appearance. The grains are smooth and shiny and are produced in several sizes from a fine to coarse grain product.
