Commercially dried vegetables excluding leafy vegetables must be dried to a moisture content of 10% or less using one of the following methods:

Hot-air (oven) drying
Freeze drying
Osmotic dehydration
Microwave dehydration
Fluidized bed drying
Alternatively, a combination of the above methods, which does not include solar (sun) drying
